THE INHERENT CHALLENGES OF TRADITIONAL FERMENTATION

This image shows traditional soy sauce fermentation—a natural process that relies on time and the open air. However, you can see the soy sauce inside these jars has spoiled, turning an unappealing black color. This is a common risk with the old method, where a single batch can be easily ruined.

While the time-honoured art of traditional fermentation relies on wild, ambient yeasts in an open environment—an inherently unpredictable and slow process that can unfold over months or even years—it is this very unpredictability that coaxes out the remarkably complex, rich, and authentic flavours we cherish. For the maker, this old-world method means every batch can taste slightly different, there's a constant risk of spoilage that ruins entire vats, and it simply cannot produce the consistent, high-quality sauce today's consumers expect, efficiently.

This closed environment allows us to perfectly guide the fermentation, ensuring a soy sauce that is consistently richer, purer, and safer in every single batch.

The Key Steps in Our Biotechnology Fermentation Process

Use Non-GMO soybeans that do not have genetic engineering

Use Aspergillus fungus to propagate koji mold and mixed with cooked wheat mixture

Microorganisms derived from the biotechnology koji mold fermentation process

Soybeans producing olive-green spores generated with the growth of koji mold

Moromi fermentation starts here where one week old koji is mixed with the salt and water solution

Begin 60 days to 180 days fermentation. Various action takes place here including lactic acid fermentation which gives the moromi rich aroma, flavour and colour
